Ambrosia Fruit Salad

I love ambrosia fruit salad. I don’t care who you are, but you can’t go wrong with cool whip and marshmallows. The word ‘ambrosia’ means food of the gods and this recipe actually originated in the late 18th century using whipped cream. It resurfaced with abandon in the 1960’s when cool whip was invented.

I grew up eating this tasty dessert and this was the recipe that my Grammy used. I hope you enjoy it as much as I do!

INGREDIENTS:

8 ounces frozen whipped topping, thawed at room temp for 3-4 hours

1 cup shredded sweetened coconut

1 11-ounce can mandarin oranges, drained

1 8-ounce can pineapple tidbits or crushed pineapple, drained

1 cup maraschino cherries, drained

1/2 cup chopped pecans, optional

1 1/2 cups mini marshmallows (I use the plain white ones but you can use the fruit flavored ones too)

INSTRUCTIONS:

In a large bowl, add all ingredients making sure the canned fruit is well drained.

Using a rubber spatula, carefully fold everything together until well-combined.

Chill before serving.
