Cereal Crusted French Toast

Cap’n Crunch French Toast 

When my husband and I first moved to Dallas (11 years ago!), we would have brunch at this trendy grille down the street and I always ordered Cap’n Crunch French Toast (along with the bottomless mimosas)- it was my FAVORITE breakfast for years. Now that I have 2 babies and live in the suburbs, I do my brunching mostly at home. But the good news is, this fantastic french toast can easily be made right in my own kitchen! The cereal coating gives the french toast a great crunchy texture and it is kid-approved!

Ingredients:

  • 3 cups Cap'n Crunch cereal, ground fine

  • 5 eggs

  • 1 teaspoon vanilla extract

  • 2 teaspoons cinnamon

  • 1/3 cup half & half (or whole milk)

  • 6 slices brioche (or challah) bread

  • 3 tablespoons Butter

Instructions:

Gather your ingredients and set out 2 shallow dishes (pie dishes work great).

In your first dish, whisk together eggs, vanilla, cinnamon, and half & half.

Put your crushed cereal in the second dish.

Melt the butter on skillet or griddle over medium heat.

Dip each slice of bread into the egg mixture and let any excess drip off.

Dredge the wet bread into the crushed cereal crumbs. Make sure both sides are evenly coated.

Place the bread onto the skillet or griddle and cook for about 2-3 minutes per side or until crispy.

Top with powdered sugar and maple syrup. YEAH TOAST!
