Green Goddess Dressing

This delicious Greed Goddess dressing recipe, aptly named for it’s gorgeous color, is almost 100 years old! The story goes that this dressing was first introduced at the Palace Hotel in 1923 in San Fransisco. The hotel chef wanted to make something special for an actor who was staying there who starred in a play titled The Green Goddess. 

I’m not sure if my Grammy’s recipe is the exactly the same as the Palace Hotel, but it sure is tasty!

INGREDIENTS

  • 1 cup parsley leaves

  • 1 cup packed spinach leaves, stemmed

  • 2 tablespoons tarragon leaves, rinsed

  • 2 tablespoons minced chives

  • 1 garlic clove, roughly chopped

  • 2 tsp anchovy paste

  • 3 tablespoons fresh lemon juice

  • 1 tablespoon champagne vinegar 

  • ½ cup olive oil

  • ½ cup mayonnaise

  •  Kosher salt & freshly ground pepper to taste

INSTRUCTIONS

In a blender or food processor, combine all ingredients until smooth.

Use as a salad dressing or as a veggie dip!
