Mini Chocolate Chip Muffins

I’ll take any excuse to have chocolate for breakfast and putting dark chocolate in these mini muffins is one of my favorites! The mini-size makes them extra fun for kids and you also feel less guilty eating 3 or 4 of them… or 5 or 6.

INGREDIENTS:

2 cups all-purpose flour
½ cup white sugar 
2 tablespoons brown sugar
1 tablespoon baking powder
½ teaspoon salt
1 egg
1 ¼ cups milk 
⅓ cup vegetable oil
2 ½ teaspoons vanilla extract
¾ cup mini chocolate chips (dark chocolate or semi-sweet), lightly dusted with flour

Extra mini chocolate chips to top the muffins

INSTRUCTIONS:

Preheat oven to 400 degrees F. Line mini muffin tins with paper liners (or you can use cooking spray).

Mix flour, white sugar, brown sugar, baking powder, and salt together in a bowl until combined.

In a separate bowl, lightly beat the egg. Next stir in milk, vegetable oil, and vanilla extract. Mix liquid mixture into flour mixture until combined (don’t over mix). Gently fold in chocolate chips. Fill muffin cups 3/4 full with batter. Top the muffin batter with a few extra chocolate chips.

Bake in the preheated oven until a toothpick inserted in a muffin comes out clean, 10 to 11 minutes. Cool for 1 minute before transferring muffins to a wire rack. Enjoy!
