The Johnson Family Brownie Recipe

IMG_0406.JPG

The first time I had these brownies was in college when my husband and I first started dating. I had no idea they were a family recipe I just knew they were SO GOOD. And in college I usually made brownies from a box but after seeing this recipe - never again! My Mother-in-Law shared with me the cookbook that the recipe comes from and LOOK AT THIS GEM:

I love that she still has the cookbook!

My favorite part about this recipe is that you don’t have to wait for the butter to get to ‘room temp’ - just microwave that sucker and get to baking! This is especially important when you have an urgent chocolate craving! Normally I bake the brownies in an 8” cake pan but this time I actually baked them in a mini-muffin tin and they turned out really well!

This recipe is also a really great base and bakes well with nuts or chocolate chips added to it.

INGREDIENTS

  • 1/2 cup (1 stick) melted butter

  • 1 cup sugar

  • 2 eggs

  • 1/2 cup cocoa powder

  • 1/2 cup sifted flour

  • 1/2 tsp salt

  • 1 tsp vanilla

INSTRUCTIONS

Preheat oven to 350F

Melt butter in the microwave (using a microwave-safe mixing bowl)

To the melted butter, add each ingredient in order above and stir well in between each addition.

Pour batter into a well-greased baking pan.

8” square or round pan: bake for 15-18 minute

Mini muffin tin: bake 10-14 minutes

Enjoy with ice cream, a glass of cold milk, coffee, a cocktail….
