Herbal Cucumber Salad

INGREDIENTS:

Dressing:

1/4 cup olive oil

1/3 cup Greek yogurt

2 tbsp lemon juice

2 garlic cloves, minced

2 tsp fresh mint, chopped

1 tsp oregano

salt & pepper to taste


Salad:

2 large English cucumbers, thinly sliced

1 (14 oz) can chickpeas, drained and rinsed

1/4 of a red onion, thinly sliced

1/4 cup flat-leaf parsley, chopped

1/4 cup fresh mint leaves, chopped

2 tbsp fresh dill, chopped


INSTRUCTIONS:

  1. Mix the dressing ingredients together until fully emulsified. Set aside

  2. Using a mandolin, slice the cucumbers and red onion into a large mixing bowl

  3. Chop fresh herbs (parsley, mint, and dill) and add to mixing bowl

  4. Rinse chickpeas (chickpeas / garbanzo beans - same thing!) and drain well. Add to mixing bowl

  5. Now carefully start adding the dressing to the salad and toss well. Start adding too little dressing - you can always add more, you can’t remove any if you add too much!

  6. Chill for minimum 2 hours in the fridge

  7. Eat & Enjoy!
