Meyer Lemon Thyme Whiskey Sour

It’s no secret that I love rye whiskey. And Lemon-Thyme Whiskey Sours are one of my signature cocktails (along with a bitter-orange old fashioned but I’ll dedicate a whole post to that) and when I saw a beautiful harvest of meyer lemons at my local grocery store I immediately knew what my Friday-night cocktail would be!

Meyer lemons are more orange in color than a regular lemon and they have a smoother peel. The taste is a little sweeter and the really good ones have a floral/herbal aroma. Such a treat to use in this drink!

INGREDIENTS (makes 1 cocktail)

2oz fresh squeezed meyer lemon juice

1 oz thyme infused simple syrup

2 oz rye whiskey

INSTRUCTIONS

To make the thyme simple syrup put 1/2 cup water and 1/2 cup granulated sugar into a pyrex measuring cup and microwave for 2 minutes. Stir until sugar is completely dissolved. Fully submerge 6 sprigs of thyme into the hot syrup and let steep for 20-30 minutes. Keeps refrigerated for up to 3 days.

Shake in a cocktail shaker until frosty (about 20 seconds) OR stir in a cocktail mixing glass 20 turns.

Pour into a lowball glass over ice. 

Garnish with a meyer lemon wheel and a few sprigs of thyme.
