SxMW Chicken & Dumplings

Chicken & Dumplings is the ultimate comfort food and it’s safe to say almost everyones Grandma has a version of this recipe! I like to add vegetables to mine to add color (and nutrition). I shortcut this recipe by using a rotisserie chicken but you can certainly roast your own chicken! I also like to use frozen vegetables because they generally retain their color better than canned but use whatever you have on hand.

INGREDIENTS

2 1/2 cups chicken (1 rotisserie chicken shredded or 2-3 chicken breasts roasted and shredded)

2 quarts chicken broth

2 cups all-purpose flour

½ tsp baking powder

2 tbsp cold salted butter, cubed

1 cup milk

1 cup carrots (canned or frozen)

1/2 cup corn (canned or frozen)

1 cup green beans (canned or frozen)

salt and pepper, to taste

INSTRUCTIONS

Pour 2 quarts of chicken stock or broth into a large pot with your veggies (Carrots, corn, green beans) and start warming it up on the stove top while you make the dumplings..

In a mixing bowl, combine flour and baking powder. Add the super-cold cubed butter to the flour mixture and cut with a pastry cutter. Pour in the milk slowly while continuing to cut with pastry cutter.

Dust your counter with a generous amount of flour. Place dumpling dough on the counter and dust it with more flour.

Roll the dough out to about 1/3” thickness, adding flour as necessary to keep the dough from sticking. Using a knife or a pizza cutter, start cutting out your dumplings. You can cut them into whatever shape you prefer but try to keep them roughly the same size so they all cook evenly.

Dust dumplings with a bit more flour. The extra flour is all gonna help keep them from sticking but will also thicken your chicken broth some as well when you add them to the pot.

Bring chicken broth up to a boil. Add in shredded chicken and stir.

Add the  dumplings one at a time so they don't stick together and let the dumplings to cook for about 15-20 minutes. You should notice your broth starting to thicken (from the extra flour) and your dumplings may start to sink a little to the bottom because they are soaking up the broth. 

Season with salt and pepper and serve!
